Recipe Wednesday: Potato Chip Chicken




My husband surprises me once in a while with the most amazing recipes imaginable. He has made this recipe to the point it comes out incredibly juicy, tender, and the crispness from the potato chips is perfect. This is a perfect inexpensive recipe if you're needing ideas with chicken.


Potato Chip Chicken by Odd Prime

Ingredients

  • 1 pound skinless, boneless chicken breast meat

  • 2 eggs (or 2 egg whites)

  • 1 teaspoon salt

1 teaspon garlic powder

  • 2 cups crushed potato chips


Directions



  1. 1. Preheat oven to 350 degrees F (176 degrees C).

    2. Separate eggs and egg whites. Then dip chicken breasts into egg whites coating both sides lightly. Let excess drip off.

    2. Put potato chip crumbs in a bowl or shallow dish along with salt and garlic powder. Roll chicken in crumbs until well coated, then place on a non-stick baking sheet that is ungreased.

  2. 3. Bake at 350 degrees F (176 degrees C) for 30 minutes or until chicken juices run clear.

Depression & PTSD: What Can You Do?




I have battled with depression since I was nine years old, though at that age I had no idea that I had depression. Having a childhood that has a traumatic brick wall getting in the way of your mental drive really has an impact on your adulthood. After having a relapse at age 15 over a simple English project I was diagnosed with Post Traumatic Stress Disorder along with chronic depression.
